LEMONY CHICKEN BONE BROTH SOUP

INGREDIENTS:


  • 2 cups organic rotisserie chicken

  • 2 carrots, diced

  • 4 stalks celery, diced

  • 1 shallot, sliced

  • 1 large zucchini, or 2 medium, sliced

  • 3 garlic cloves, minced

  • 4 1/2 cups chicken bone broth

  • 1 lemon, juice of

  • 1 tsp white pepper, omit for no spice

  • 1 tbsp onion powder

  • 1 tsp garlic powder

  • 1 tsp red pepper flake, omit for no spice

  • salt and pepper, to taste

  • 1 tbsp extra virgin olive oil

  • 1/2 cup fresh dill, chopped

  • shaved parmesan, for topping


METHOD:


1. Heat a large pot over medium-high heat. Drizzle of olive oil.

2. Mince 3 garlic cloves. Chop all veggies.

3. Add the garlic to the pot. Sauté for two minutes, then add the shallot.

4. Sauté the shallot for two minutes. Add all other veggies, and seasonings.

5. Add the chicken bone broth. Slice a lemon, and add the juice to the pot.

6. Chop up 1/2 cup of fresh dill, and add to the pot. Cover with a lid for 30 minutes.

7. Slice rotisserie chicken into small bite-size pieces. Add to the pot after 30 minutes. Simmer for 15 minutes.

8. Plate soup. Top with red pepper flake if desired, and shaved parmesan. Enjoy.
