BLOOD-SUGAR BALANCING PICKLED RED ONIONS

INGREDIENTS:
1 red onion, sliced
1 cup filtered water
1 cup apple cider vinegar
3 tbsp red wine vinegar
METHOD:
1. Bring a small boiling pot over medium-high heat. Add the water, ACV, and red wine vinegar.
2. Bring the liquid mixture to a boil, and thinly slice the red onion.
3. Add the sliced onions to a jar, followed by the steamy liquid mix.
4. Refrigerate for 6-36 hours. Enjoy, and store in the fridge for up to 2-3 weeks.
