CAPRESE-STYLE CRISPY CHICKEN CUTLETS

INGREDIENTS:
1 pasture-raised chicken breast
1 tbsp olive oil
1 cup cauliflower breadcrumbs
2 pasture-raised eggs
1/2 cup tapioca flour
1 1/2 cup cherry tomatoes
3 garlic cloves
1/3 cup avocado oil, more as needed
salt and pepper, to taste
A2 burrata, 1 ball
fresh basil, for topping
1 tbsp balsamic glaze, for topping
METHOD:
1. Preheat the oven to 425 degrees. Add the cherry tomatoes to an oven-safe baking dish. Add 1 tbsp olive oil, garlic cloves, salt and bake for 25 minutes.
2. Wash, then butterfly the chicken breast, and salt.
3. Create the breading station of the mixed eggs, flour, and breadcrumbs on separate plates.
4. Bring a large saucepan to medium-high heat. Add the avocado oil. Bring to a simmer.
5. Dip the chicken into the flour, eggs then breadcrumbs. Repeat until generously coated. Set aside.
6. Add the chicken when the oil has come to a simmer. Lightly fry on each side until browned for about 3 1/2 minutes.
7. Roll up, and slice up some fresh basil.
8. Remove the tomatoes. Plate the chicken breast.
9. Add the tomatoes, burrata, basil, balsamic glaze, and pepper flake if desired. Enjoy warm.
