TURKEY CARNITAS BOWLS

INGREDIENTS:


  • Diestel Family Ranch Turkey Carnitas, 1 serving

  • 1/4 cup filtered water

  • 2 cups spinach and kale mix

  • 2 cups cauliflower rice

  • 1/2 avocado, smashed

  • 1 yellow onion, diced

  • 1/4 cup sheep feta

  • 1/3 cup pico de gallo

  • 2 tbsp pomegranate seeds

  • 1/3 cup homemade jalapeno ranch sauce

  • pickled red onions for topping, optional



METHOD:


1. . Bring a large saucepan to medium-high heat.

2. Add the package of turkey carnitas and filtered water to the saucepan. Cover with a lid for 7 minutes.

3. Cook the cauliflower rice. Slice and mash the avocado.

4. Add the greens, cauliflower rice, sheep feta, pico, mashed avocado, and pomegranate seeds to a bowl.

5. Use a fork to shred carnitas once cooked. Add to the bowl.

6. Top with pickled onions and sauce if desired. Enjoy warm.
