HARISSA BUTTER BEAN SHAKSHUKA

INGREDIENTS:


  • extra virgin olive oil, a drizzle

  • 2 tbsp minced garlic

  • 3 tbsp harissa

  • 1 1/2 cups tomato sauce

  • eden foods butter beans, 1 can

  • 3 pasture-rasied eggs

  • 1/3 cup goat feta

  • 1/2 tbsp red pepper flake

  • fresh dill, for topping

  • gluten-free sourdough for serving, optional



METHOD:


1. Drizzle olive oil in a large heated saucepan. Add the garlic and harissa. Stir and simmer for 2-3 minutes.

2. Add the tomato sauce and can of butter beans, after the beans have been rinsed.

3. Raise the heat to medium-high heat. Crack 3 pasture-raised eggs into the pan and cover with lid for 4-5 minutes.

4. Butter or spray gluten-free sourdough with olive oil spray and toast 1-2 slices.

5. Uncover and add the feta cheese.

6. Remove from heat. Top with fresh dill, pepper flake, and any toppings as desired.

7. Serve with toasted sourdough, and enjoy warm!
