CREAMY BEETROOT HUMMUS

I love making this hummus to prep for my week ahead, or use on occasions where I am entertaining guests at home. It’s nutritious, a great staple, and tastes as good as it looks.

CREAMY BEETROOT HUMMUS

INGREDIENTS:
1 can butter beans
1/3 cup tahini
1/2 cup extra virgin olive oil, more for topping
1 1/2 cups ready-to-eat beets
1 tsp salt
fresh mint for topping, optional
microgreens for topping, optional
pine nuts, for topping
METHOD:
1. Drain and rinse the butter beans.
2. Add the butter beans to the blender along with, the tahini, beets, salt and olive oil. The beets I’m using are already roasted to make things easier.
3. Blend together until smooth.
4. Plate and enjoy with crudités or pita bread.
